Sardine & Spinach Pasta Salad

Ingredients
- 1 can King Oscar Skinless & Boneless Sardines in Olive Oil, reserve oil
- 8 oz pasta, cooked to package instructions
- 1 clove garlic, minced
- 2 tbsp balsamic vinegar
- 2 tbsp fresh lemon juice, extra lemon wedges for serving
- 1/2 cup peas, from can or thawed from frozen
- 1 cup cherry tomatoes, quartered
- 4 oz feta cheese
- 1 cup chopped spinach
- 2 tbsp chopped fresh dill
- Salt
- Cracked pepper
A Mediterranean-inspired pasta salad with sardines, spinach, cherry tomatoes, peas, feta, and fresh dill tossed in a garlicky balsamic and lemon dressing. Serve it warm or chilled .
Instructions
- In large bowl, combine minced garlic, reserved oil, balsamic vinegar, and lemon juice.
- Stir in cooked pasta, peas, tomatoes, cheese, spinach, and dill.
- Gently fold in sardines.
- Season with salt and pepper, to taste.
