Provençal Dijon Sardine Salad

Ingredients
- 1 can King Oscar Sardines in Dijon Mustard
- 1 lb baby potatoes, halved or quartered
- 1/4 lb green beans, trimmed and cut into bite-sized pieces
- 3 tbsp sliced green olives
- 1/4 cup jarred roasted peppers, drained and sliced
- 2 tbsp chopped fresh herbs (parsley, thyme, oregano)
- 2 boiled eggs, quartered
- Black pepper
Inspired by French country cooking, this salad brings together Dijon mustard sardines, baby potatoes, green beans, olives, and sweet roasted peppers.
Instructions
- Boil potatoes and green beans until tender. Drain, rinse with cool water and set aside.
- In large bowl, add cooked potatoes, green beans, olives, bell peppers, and fresh herbs.
- Fold in sardines, including Dijon mustard sauce from can.
- For serving, top potato salad with boiled eggs and black pepper, to taste.
