Mexican Salad with Sardines

Add some royal seafood to that Mexican-style tomato and creamy avocado salad for some easy and delicious cha-cha-cha!

INGREDIENTS

  • 1 can King Oscar Skinless & Boneless Sardines in Oil (reserve oil)
  • 1 lb assorted ripe tomatoes (your favorite varieties)
  • 1/4 cup roasted sweet red peppers, sliced
  • 1/4 red onion, thinly sliced
  • 2 ripe avocados
  • 1/4 cup extra virgin olive oil
  • Red wine vinegar, if desired
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped

HERE’S WHAT YOU DO...

  1. Place drained sardines in center of serving platter.
  2. Core tomatoes and slice across the equator into thick slices. Peel and pit avocados, slice into crescent shapes. Arrange tomatoes and avocados around sardines.
  3. Scatter all with roasted peppers and onion slivers, drizzle with reserved sardine can oil. Add salt and pepper to taste. If desired, dress with additional olive oil and/or vinegar.
  4. Scatter cilantro over platter and serve.
