High Protein Air Fryer Mackerel Bites

Ingredients
For Mackerel Bites
- 2 cans King Oscar Mackerel in Olive Oil, oil reserved
- 1/2 cup grated parmesan cheese
- 3 tbsp almond flour, plus extra for coating
- 1 tbsp mayo
- 1 large egg, beaten
- 3 tbsp chopped parsley
- 1/4 tsp salt, or to preference
- black pepper
For Coating
- 1/3 cup grated parmesan cheese
- 1/2 cup almond flour
- Dipping sauce options: hot sauce, bbq sauce, marinara, tartar sauce
Crispy on the outside, tender on the inside, these air fryer mackerel bites are coated in a parmesan and almond flour crust and served with your favorite dipping sauce.
Instructions
- Drain and reserve the oil from the mackerel cans.
- Combine the mackerel, the 1/2 cup grated parmesan cheese, 3 tablespoons almond flour, mayo, egg, parsley, salt, and pepper. Stir and mash until the large chunks of mackerel are broken up and everything is well combined.
- Form the mackerel mixture into bite sized patties, about 2 tablespoons of mixture per bite.
- For the coating: combine the 1/3 cup of parmesan cheese and 1/2 cup of almond flour in a shallow bowl.
- Coat the bites with almond flour mixture, then brush the mackerel bites with the reserved oil from the mackerel cans.
- Preheat the air fryer at 400°F for about 4 minutes.
- Add the mackerel bites to the air fryer, making sure the bites aren’t touching.
- Air fry mackerel bites at 400°F for 6 minutes.
- Flip the bites and then continue to air fry at 400°F for 4-6 minutes or until golden and cooked through.
- Serve warm with your favorite dipping sauce.
