Ingredients

  • 1 can King Oscar Mackerel Mediterranean Style, oil reserved 
  • 8 oz. feta cheese, drained  
  • 5 tbsp olive oil, divided  
  • 1/2 tsp garlic powder 
  • 8 oz. cherry tomatoes 
  • 2 tbsp chopped parsley 
  • For serving: toasted bread, crackers, potato chips, raw sliced vegetables 

Silky whipped feta, blistered cherry tomatoes, and flaked Mediterranean-style mackerel with olives, herbs, and a drizzle of bright olive oil.

Instructions

  1. Make the Whipped Feta: In small food processor add the feta cheese, 3 tbsp olive oil, and garlic powder. Blend until smooth. 
  2. For the Blistered Tomatoes: Heat pan on high heat. Add remaining 2 tbsp of oil and cherry tomatoes. Sear the tomatoes until softened and blistered. 
  3. Spread whipped feta on serving bowl. Top with blistered tomatoes, chunks of mackerel, and olives from the mackerel can. 
  4. Garnish with parsley and serve with seared toasted bread or dipping options of preference.
