Whipped Feta Dip with Mediterranean Mackerel and Blistered Tomatoes

Ingredients
- 1 can King Oscar Mackerel Mediterranean Style, oil reserved
- 8 oz. feta cheese, drained
- 5 tbsp olive oil, divided
- 1/2 tsp garlic powder
- 8 oz. cherry tomatoes
- 2 tbsp chopped parsley
- For serving: toasted bread, crackers, potato chips, raw sliced vegetables
Silky whipped feta, blistered cherry tomatoes, and flaked Mediterranean-style mackerel with olives, herbs, and a drizzle of bright olive oil.
Instructions
- Make the Whipped Feta: In small food processor add the feta cheese, 3 tbsp olive oil, and garlic powder. Blend until smooth.
- For the Blistered Tomatoes: Heat pan on high heat. Add remaining 2 tbsp of oil and cherry tomatoes. Sear the tomatoes until softened and blistered.
- Spread whipped feta on serving bowl. Top with blistered tomatoes, chunks of mackerel, and olives from the mackerel can.
- Garnish with parsley and serve with seared toasted bread or dipping options of preference.
