Ingredients
- 1 can King Oscar Mackerel Fillets in Olive Oil with Lemon, reserve oil
- 4 cups arugula
- 1 cup cooked whole grains (brown rice, quinoa, pearl barley)
- 1/2 cup jarred roasted peppers, drained and sliced
- 1/4 cup kalamata olives, halved
- 1/4 cup red onion, sliced
- 1/4 cup crumbled feta cheese
- Chopped fresh dill
- Lemon slices
- Black pepper
Peppery arugula and hearty whole grains make a perfect base for a bowl with lemon mackerel, roasted red peppers, kalamata olives, and creamy feta.
Instructions
- On large platter, lay arugula, cooked grains, peppers, olives, and red onion.
- Lay mackerel over salad, breaking mackerel into bite-sized chunks.
- Sprinkle with feta cheese, season with black pepper, to taste.
- Before serving, drizzle with reserved oil.
- Serve with extra lemon slices.
