Lemon Mackerel High Protein Quinoa Egg and Avocado Bowl

Ingredients
- 1 can King Oscar Mackerel with Lemon, oil and juice reserved
- 1 cup cooked quinoa
- 1/2 cup greens of choice (lettuce, arugula, cabbage, etc.)
- 1 hard-boiled egg, quartered
- 2 tbsp roasted nuts, chopped
- 1/4 cup grated cheese
- 1/2 avocado, sliced
- 1 tbsp chopped fresh herbs (dill, basil, oregano, thyme, etc.)
- Optional additional protein ingredients: beans, chickpeas, lentils
- Salt, to taste
- Black pepper, to taste
Great anytime of the day, lemon mackerel tops quinoa and fresh greens with hard-boiled egg, creamy avocado and a lemony dressing.
Instructions
- Drain and reserve the oil and juice from the can of King Oscar Mackerel with Lemon.
- In serving bowl add cooked quinoa and greens of choice. Top with hard-boiled egg, roasted nuts, cheese, avocado, mackerel, and chopped herbs. Add any additional protein ingredients, if desired.
- Top the bowl with the olive oil and lemon juice from the mackerel can. Season with salt and pepper to taste.
