Ingredients

  • 1 can King Oscar Mackerel with Lemon, oil and juice reserved
  • 1 cup cooked quinoa
  • 1/2 cup greens of choice (lettuce, arugula, cabbage, etc.)
  • 1 hard-boiled egg, quartered
  • 2 tbsp roasted nuts, chopped
  • 1/4 cup grated cheese
  • 1/2 avocado, sliced
  • 1 tbsp chopped fresh herbs (dill, basil, oregano, thyme, etc.)
  • Optional additional protein ingredients: beans, chickpeas, lentils
  • Salt, to taste
  • Black pepper, to taste

Great anytime of the day, lemon mackerel tops quinoa and fresh greens with hard-boiled egg, creamy avocado and a lemony dressing.

Instructions

  1. Drain and reserve the oil and juice from the can of King Oscar Mackerel with Lemon.
  2. In serving bowl add cooked quinoa and greens of choice. Top with hard-boiled egg, roasted nuts, cheese, avocado, mackerel, and chopped herbs. Add any additional protein ingredients, if desired. 
  3. Top the bowl with the olive oil and lemon juice from the mackerel can. Season with salt and pepper to taste.
