Green Goddess Mackerel Salad Sandwich

Your favorite green goddess and your beloved tinned fish king have created a tangy, rich, protein-packed seafood sando masterpiece! Tender mackerel, crisp veggies, creamy dressing, and contrasting textures make this one for the ages.

INGREDIENTS

  • 1 can King Oscar Mackerel Mediterranean Style (or Olive Oil)
  • 1/4 cup Greek yogurt or mayo (or a mix)
  • 1 tbsp lemon juice
  • 1/2 avocado, mashed
  • 2 tbsp chopped chives
  • 1 tbsp chopped fresh tarragon or parsley
  • 1 tbsp chopped dill
  • 1 small clove garlic, minced (optional)
  • Salt and black pepper, to taste
  • Sliced cucumber, radish, and leafy greens for layering
  • 2 slices artisan sandwich bread, your favorite

HERE’S WHAT YOU DO...

  1. In a bowl, mash mackerel with a fork.
  2. Stir in yogurt or mayo, lemon juice, salt, pepper, mashed avocado, chopped herbs, and minced garlic (if using).
  3. Mix until creamy and well combined.
  4. Layer sliced cucumber, radish, and greens on one slice of bread.
  5. Spoon mackerel salad generously on top.
  6. Close sandwich with second bread slice, cut in half, and serve immediately – or enjoy open-faced.
