Ingredients

  • 2 cans King Oscar Mackerel in Sweet Thai Chili Sauce
  • 3 cups cooked grains (quinoa, couscous, brown rice or wild rice), cooked to package instructions 
  • 1 tbsp olive oil 
  • 3 cups broccoli 
  • 4 oz. mushrooms, sliced 
  • 1 cup cooked shelled edamame (soy beans)
  • 1 avocado, sliced or cubed
  • Salt, to personal taste 
  • Black pepper, to personal taste 

Sweet Thai chili mackerel and sautéed broccoli, mushrooms, and edamame over a bed of hearty grains with creamy avocado. A nourishing bowl with bold flavor that's ready in 20 minutes.

Instructions

  1. Heat pan on medium-high heat. Add oil and then add broccoli and mushrooms. Cook until broccoli is tender to your preference. 
  2. Add edamame. Cook for about 1-2 minutes or until edamame is heated through. 
  3. Add mackerel and sauce from the can into the pan of vegetables and cook for additional 1-2 minutes or until mackerel is warm. 
  4. In serving bowls add cooked grains and top with sautéed vegetables, mackerel, and avocado. 
  5. Season with additional salt and pepper, to personal taste.
