Sweet Thai Chili Mackerel Grain Bowls with Sautéed Vegetables

Ingredients
- 2 cans King Oscar Mackerel in Sweet Thai Chili Sauce
- 3 cups cooked grains (quinoa, couscous, brown rice or wild rice), cooked to package instructions
- 1 tbsp olive oil
- 3 cups broccoli
- 4 oz. mushrooms, sliced
- 1 cup cooked shelled edamame (soy beans)
- 1 avocado, sliced or cubed
- Salt, to personal taste
- Black pepper, to personal taste
Sweet Thai chili mackerel and sautéed broccoli, mushrooms, and edamame over a bed of hearty grains with creamy avocado. A nourishing bowl with bold flavor that's ready in 20 minutes.
Instructions
- Heat pan on medium-high heat. Add oil and then add broccoli and mushrooms. Cook until broccoli is tender to your preference.
- Add edamame. Cook for about 1-2 minutes or until edamame is heated through.
- Add mackerel and sauce from the can into the pan of vegetables and cook for additional 1-2 minutes or until mackerel is warm.
- In serving bowls add cooked grains and top with sautéed vegetables, mackerel, and avocado.
- Season with additional salt and pepper, to personal taste.
