Sweet Thai Chili Mackerel Vegetable Stir Fry

Ingredients

  • 2 cans King Oscar Mackerel in Sweet Thai Chili Sauce
  • 2 tbsp oil
  • 3 cloves garlic, minced
  • 1 cup green beans, cut into bite size pieces
  • 1 bell pepper, sliced
  • 1 zucchini or summer squash, sliced
  • 1/2 red onion, sliced 
  • 2 tbsp Thai basil leaves, torn or sliced

We're making the most of seasonal produce in this sweet and spiced Thai-style stir-fry with green beans, bell peppers, and zucchini.

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the garlic and cook for about 30 seconds or until softened. 
  2. Stir in the green beans, bell pepper, zucchini or summer squash, and red onion.  Sauté for about 3-5 minutes or until cooked to your preferred tenderness. 
  3. Stir in the mackerel, including the sauce from the can. Cook for another 1-2 minutes or until heated through. 
  4. Place in a serving bowl and top with Thai basil.
