Sweet Thai Chili Mackerel Vegetable Stir Fry

Ingredients
- 2 cans King Oscar Mackerel in Sweet Thai Chili Sauce
- 2 tbsp oil
- 3 cloves garlic, minced
- 1 cup green beans, cut into bite size pieces
- 1 bell pepper, sliced
- 1 zucchini or summer squash, sliced
- 1/2 red onion, sliced
- 2 tbsp Thai basil leaves, torn or sliced
We're making the most of seasonal produce in this sweet and spiced Thai-style stir-fry with green beans, bell peppers, and zucchini.
Instructions
- Heat the oil in a large skillet over medium-high heat. Add the garlic and cook for about 30 seconds or until softened.
- Stir in the green beans, bell pepper, zucchini or summer squash, and red onion. Sauté for about 3-5 minutes or until cooked to your preferred tenderness.
- Stir in the mackerel, including the sauce from the can. Cook for another 1-2 minutes or until heated through.
- Place in a serving bowl and top with Thai basil.
