Ingredients

  • 1 can King Oscar Mackerel with Lemon
  • 2 slices bread
  • 2 tbsp mayo and/or mustard 
  • 2 slices American cheese
  • 1 tomato, sliced
  • 1/4 cup grated cheddar cheese
  • 1/4 cup grated parmesan

Consider the tuna melt reimagined. Lemon mackerel piled onto toasted bread with tomato and a trio of cheeses, then baked until bubbly and golden.

Instructions

  1. Pre-heat oven to 375°F. 
  2. Drain mackerel and break the fillets into small chunks. 
  3. On baking sheet place bread, then spread mayo and mustard. 
  4. Place tomato and cheese then top with mackerel, cheddar cheese and parmesan. 
  5. Bake for about 3-5 minutes or until cheese is melted and mackerel is warm.
