3-Cheese Lemon Mackerel Melt

Ingredients
- 1 can King Oscar Mackerel with Lemon
- 2 slices bread
- 2 tbsp mayo and/or mustard
- 2 slices American cheese
- 1 tomato, sliced
- 1/4 cup grated cheddar cheese
- 1/4 cup grated parmesan
Consider the tuna melt reimagined. Lemon mackerel piled onto toasted bread with tomato and a trio of cheeses, then baked until bubbly and golden.
Instructions
- Pre-heat oven to 375°F.
- Drain mackerel and break the fillets into small chunks.
- On baking sheet place bread, then spread mayo and mustard.
- Place tomato and cheese then top with mackerel, cheddar cheese and parmesan.
- Bake for about 3-5 minutes or until cheese is melted and mackerel is warm.
