Ingredients
- 1 can King Oscar Mackerel Mediterranean Style, oil reserved
- 2 cups arugula
- 1 can artichoke hearts, drained
- 1 can chickpeas, drained
- 1 small cucumber, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, sliced
- Fresh basil, chopped
- Salt, to personal taste
- Black pepper, to personal taste
- Lemon wedges, for serving
Mediterranean-style mackerel, tender artichoke hearts, hearty chickpeas, peppery arugula, and Kalamata olives all dressed in the bright, herb-infused oil straight from the tin.
Instructions
- Cut artichoke hearts into halves or quarters. Place artichoke hearts on serving platter or large bowl.
- Add arugula, chickpeas, cucumber, cherry tomatoes, and olives.
- Drizzle reserved oil from the can over the salad, then stir in the mackerel and break into large chunks.
- Top with fresh basil and season with salt and pepper, to personal taste. Serve with lemon wedges.
