Ingredients

  • 1 can King Oscar Mackerel Mediterranean Style, oil reserved  
  • 2 cups arugula 
  • 1 can artichoke hearts, drained  
  • 1 can chickpeas, drained  
  • 1 small cucumber, thinly sliced 
  • 1 cup cherry tomatoes, halved 
  • 1/4 cup Kalamata olives, sliced 
  • Fresh basil, chopped
  • Salt, to personal taste
  • Black pepper, to personal taste 
  • Lemon wedges, for serving

Mediterranean-style mackerel, tender artichoke hearts, hearty chickpeas, peppery arugula, and Kalamata olives all dressed in the bright, herb-infused oil straight from the tin.

Instructions

  1. Cut artichoke hearts into halves or quarters. Place artichoke hearts on serving platter or large bowl. 
  2. Add arugula, chickpeas, cucumber, cherry tomatoes, and olives. 
  3. Drizzle reserved oil from the can over the salad, then stir in the mackerel and break into large chunks. 
  4. Top with fresh basil and season with salt and pepper, to personal taste. Serve with lemon wedges.
