Baked Skillet Eggs with Salmon

Combine the sensational taste of salmon with Mediterranean flavors, farm-fresh eggs, and cherry tomatoes to make this other-world, show-stopper brunch. His Majesty gives it five crowns!

INGREDIENTS

  • 1 can King Oscar Salmon Mediterranean Style, separated into bite-size pieces
  • 4 eggs
  • 4 baguette slices, toasted
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp milk
  • 1 tbsp butter, melted
  • 8-10 basil leaves
  • 1 tbsp thyme leaves
  • Salt and pepper to taste

HERE’S WHAT YOU DO...

  1. Preheat oven to 375°F.
  2. Brush two 6-inch cast iron skillets or oven-safe ramekins with melted butter.
  3. Into each skillet, crack two eggs, 1 tbsp milk, 1/4 cup tomatoes, salmon pieces, salt and pepper.
  4. Bake in middle of oven for 8 minutes, or until egg whites have set and yolks are still runny.
  5. Garnish with fresh basil, thyme, and toasted baguette slices for dipping.
