Ingredients

  • 1 can King Oscar Kipper Snacks in Extra Virgin Olive Oil, reserve oil
  • 5 oz asparagus, ends removed
  • 2 large eggs
  • 1 medium avocado, sliced
  • 1 medium tomato, sliced
  • 2 slices toast
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Kippers and eggs are a natural pairing. This fresh take on avocado toast adds juicy tomatoes and tender asparagus for a balanced meal that works any time of day.

Instructions

  1. Heat pan on medium-high heat, add half the oil from kipper snacks tin.
  2. Sauté asparagus until tender, season with salt and pepper, remove from pan.
  3. Add remaining half of kipper snacks oil to heated pan. Fry eggs.
  4. Layer the toast with avocado, tomato, egg, and kipper snacks.
  5. Season egg with salt and pepper, to taste.
  6. Serve with asparagus and lemon.
