Kipper Snacks & Fried Egg Toast

Ingredients
- 1 can King Oscar Kipper Snacks in Extra Virgin Olive Oil, reserve oil
- 5 oz asparagus, ends removed
- 2 large eggs
- 1 medium avocado, sliced
- 1 medium tomato, sliced
- 2 slices toast
- Salt and pepper, to taste
- Lemon wedges, for serving
Kippers and eggs are a natural pairing. This fresh take on avocado toast adds juicy tomatoes and tender asparagus for a balanced meal that works any time of day.
Instructions
- Heat pan on medium-high heat, add half the oil from kipper snacks tin.
- Sauté asparagus until tender, season with salt and pepper, remove from pan.
- Add remaining half of kipper snacks oil to heated pan. Fry eggs.
- Layer the toast with avocado, tomato, egg, and kipper snacks.
- Season egg with salt and pepper, to taste.
- Serve with asparagus and lemon.
