Mediterranean Salmon Air Fryer Nuggets

Ingredients
- 2 cans King Oscar Salmon Mediterranean Style
- 1/3 cup grated parmesan cheese
- 2 tbsp chopped parsley
- 3 tbsp breadcrumbs or panko, plus extra for coating
- 1 tbsp mayo
- 1 large egg, beaten
- 1/4 tsp salt, or to personal taste
- black pepper, to personal taste
- Additional oil if needed for brushing
- Dipping sauce options: hot sauce, bbq sauce, marinara
Mediterranean-style salmon is the key to these family-friendly crispy nuggets. Serve with your favorite dipping sauce and please even your pickiest eaters.
Instructions
- Drain and reserve the oil from the salmon cans. Keep the olives and herbs with the salmon. Set both aside.
- Combine the salmon (with the olives & herbs), grated parmesan cheese, parsley, breadcrumbs, mayo, egg, salt, and pepper. Stir and mash until the large chunks of salmon are broken up and everything is well combined.
- Form the salmon mixture into bite sized nuggets, about 2 tablespoons of mixture per nugget.
- Coat with the breadcrumbs then brush the salmon nuggets with the reserved oil.
- Preheat the air fryer at 400°F for about 4 minutes.
- Add the salmon nuggets to the air fryer, making sure the nuggets aren’t touching (cook in batches if needed).
- Air fry at 400°F for 6 minutes.
- Flip the nuggets and then continue to air fry at 400°F for 4-5 minutes or until golden and cooked through.
- Serve warm with hot sauce or your favorite dipping sauce.
