Baked Skillet Eggs with Salmon

Ingredients
- 1 can King Oscar Salmon Mediterranean Style, separated into bite-size pieces
- 4 eggs
- 4 baguette slices, toasted
- 1/2 cup cherry tomatoes, halved
- 2 tbsp milk
- 1 tbsp butter, melted
- 8-10 basil leaves
- 1 tbsp thyme leaves
- Salt and pepper to taste
Mediterranean-style salmon and cherry tomatoes baked with eggs in a cast iron skillet until the whites are set and the yolks still runny, served with toasted baguette for dipping.
Instructions
- Preheat oven to 375°F.
- Brush two 6-inch cast iron skillets or oven-safe ramekins with melted butter.
- Into each skillet, crack two eggs, 1 tbsp milk, 1/4 cup tomatoes, salmon pieces, salt and pepper.
- Bake in middle of oven for 8 minutes, or until egg whites have set and yolks are still runny.
- Garnish with fresh basil, thyme, and toasted baguette slices for dipping.
