Smoked Kipper Snacks Musubi

Ingredients
- 1 can King Oscar Kipper Snacks Lightly Smoked
- 2 cups cooked white rice
- 1 tbsp rice vinegar
- 1/2 tsp sugar
- 1/4 tsp salt
- 2 sheets sushi nori seaweed
- 3 tbsp furikake
- Teriyaki glaze or soy sauce (optional)
Hawaii's beloved on-the-go snack gets a new filling: lightly smoked kipper snacks layered over seasoned rice with furikake and wrapped in nori.
Instructions
- Cut sushi nori seaweed sheets into 1” wide strips. Set aside.
- If you’re using a musubi mold, place 1/4 cup of rice and press firmly into the mold to create the musubi rice base shape.
- You don’t need a mold and can shape the rice by hand: Lightly wet your hands and use 1/4 cup of rice to form flat oblong discs about 1/2” thick. Press the rice firmly as you’re shaping the discs. Repeat for all rice, you should have about 8 discs.
- Place the seaweed strips on working surface and lay formed rice in the middle of the seaweed strip.
- Sprinkle furikake over rice and place kipper snacks in single layer over the rice. If desired, add a light brush of teriyaki sauce or soy sauce over the kippers.
- Bring both ends of seaweed strip over the kipper snacks and seal the top of the seaweed with a little water.
- Serve with optional soy sauce, teriyaki sauce, additional furikake, hot sauce, pickled ginger, etc.
