Ingredients
- 8 oz. spaghetti or fettuccine pasta, cooked to package instructions
- 1 can King Oscar Sardines with Spicy Cracked Pepper, oil and cracked pepper reserved
- 1 cup Pecorino Romano cheese or parmesan cheese, or amount to personal taste
- Optional fresh cracked black pepper, to personal taste
Spicy cracked pepper sardines and their peppery oil standing in for the classic cacio e pepe base, tossed with spaghetti and Pecorino Romano into a creamy, boldly seasoned pasta.
Instructions
- Cook pasta to package instructions and drain, reserving about 1/2 cup pasta water.
- Heat a skillet on medium-high heat. Add cracked pepper and oil from the sardine can.
- Add the pasta and cheese to the pan.
- Gently stir the pasta until the cheese melts.
- Add about 1/4 cup of pasta water, or more if needed until the sauce becomes creamy.
- Stir in the sardines and cook for 1-2 minutes or until sardines are warmed.
- Add additional cheese or black pepper if desired and serve pasta immediately while still warm.
