Roasted Cracked Pepper Sardines with Tomato & Herbs

Ingredients
- 1 can King Oscar Sardines in Extra Virgin Olive Oil with Spicy Cracked Pepper, drained
- 1/4 red onion, minced
- 4 oz cherry tomatoes, halved
- 2 tbsp chopped fresh parsley
- 1/2 tsp chopped fresh thyme
- 2 cloves minced garlic
- 4 slices lemon
- Salt, to taste
- Toasted baguette or pasta
Cracked pepper sardines roasted with cherry tomatoes, garlic, fresh herbs, and lemon until the tomatoes blister and the flavors meld. Serve with toasted baguette or spoon over pasta.
Instructions
- Pre-heat oven to 425°F.
- In bowl, combine red onion, tomatoes, herbs, garlic, lemon slices, and salt.
- Gently toss sardines into mixture. Spread in single layer in baking dish.
- Roast for about 15-20 minutes or until tomatoes are soft.
- Serve with toasted baguette slices or serve over pasta.
