Chili Mussels Dynamite Toast

Ingredients
- 1 can King Oscar Mussels with Chili, oil reserved
- 8 oz. cream cheese, softened
- 1/2 cup parmesan cheese
- 4 stalks green onions
- 1/2 tsp garlic powder
- 1/4 tsp salt, to personal preference
- Fresh cracked black pepper
- 1 small baguette, sliced
- Optional topping: sriracha mayo, teriyaki or takoyaki sauce, green onions, furikake, toasted sesame seeds
Smoky chili mussels folded into a creamy parmesan filling, spooned onto baguette slices, and broiled until golden and bubbling with bold toppings to finish.
Instructions
- Pre-heat oven to broil at 500°F.
- In a bowl combine cream cheese, parmesan cheese, green onions, garlic powder, salt, and pepper. Stir until smooth.
- Fold in half of the mussels until combined with the cheese mixture. Try not to smash the mussels and keep them as whole as possible.
- Spread about 1 tablespoon of mussel/cheese filling over each baguette slice. With the remaining half of the mussels, place 1-2 mussels on top of each slice. Brush tops with reserved mussels oil.
- Broil for about 3-5 minutes or until bubbly and the top turns golden. Remove from oven.
- Allow toast to cool slightly. Top with a drizzle of sriracha mayo, teriyaki or takoyaki sauce, green onions, and/or your favorite toppings.
