Skinless Boneless Sardine Bites Chimichurri

BITES
- 2 cans King Oscar Skinless & Boneless Sardines in Water-Low Sodium, water drained
- 1/2 cup soft herbed cheese, room temperature
- Chimichurri sauce
- Slices of baguette or crackers
- Optional toppings: pickled red onion, sliced/chopped tomato, chopped fresh herbs
CHIMICHURRI SAUCE
- 1/2 cup finely chopped parsley
- 2 cloves garlic, minced
- 1 tbsp finely minced shallots
- 1 small chili, minced
- 1/4 cup olive oil
- 2 tbsp red wine vinegar (or apple cider vinegar)
- 1 tsp honey
- Zest of 1 medium lemon
- 1 tbsp fresh lemon juice
- 1/2 tsp salt, optional
- 1/4 tsp fresh cracked black pepper
Smooth herbed cheese and tender skinless sardines on crisp baguette slices, finished with a bright chimichurri of parsley, garlic, chili, lemon, and red wine vinegar.
Instructions
- Make the Chimichurri Sauce: In a bowl combine all chimichurri ingredients (parsley, garlic, shallots, chili, olive oil, vinegar, honey, lemon zest, lemon juice, optional salt, and black pepper) or combine all the chimichurri ingredients in a small food processor and blend together until well combined. Taste for seasonings: add more salt for extra savory flavor, additional chili for more heat, or more lemon juice for brighter citrus flavors.
- Assemble the bites: Spread the softened herbed cheese over baguette slices or crackers.
- Top with sardines and any additional favorite toppings.
- Drizzle chimichurri sauce over the sardine bites just before serving. Top with extra black pepper if desired.
