Mexican Salad with Sardines

Ingredients
- 1 can King Oscar Skinless & Boneless Sardines in Oil (reserve oil)
- 1 lb assorted ripe tomatoes (your favorite varieties)
- 1/4 cup roasted sweet red peppers, sliced
- 1/4 red onion, thinly sliced
- 2 ripe avocados
- 1/4 cup extra virgin olive oil
- Red wine vinegar, if desired
- Salt and pepper to taste
- 2 tbsp fresh cilantro, chopped
Ripe tomatoes, creamy avocado, roasted peppers, and red onion arranged around tender sardines and drizzled with olive oil and fresh cilantro.
Instructions
- Place drained sardines in center of serving platter.
- Core tomatoes and slice across the equator into thick slices. Peel and pit avocados, slice into crescent shapes. Arrange tomatoes and avocados around sardines.
- Scatter all with roasted peppers and onion slivers, drizzle with reserved sardine can oil. Add salt and pepper to taste. If desired, dress with additional olive oil and/or vinegar.
- Scatter cilantro over platter and serve.
