Lemon Sardines Roast Potato Bake

Ingredients
- 2 cans King Oscar Sardines in Extra Virgin Olive Oil with Lemon, oil reserved
- 1.5 pounds potatoes, thinly sliced
- 1/2 tsp salt, or to personal taste
- 1/2 tsp black pepper, or to personal taste
- 1/2 cup shredded cheese (parmesan, cheddar or your choice of favorite melty cheese)
- 1/4 cup chopped parsley, for serving
- Lemon wedges, for serving
In this one-pan bake, thinly-sliced potatoes are roasted and topped with lemon sardines, Parmesan and a squeeze of lemon.
Instructions
- Pre-heat oven to 400°F.
- In a bowl add sliced potatoes, reserved oil from sardine cans, salt, and black pepper. Set aside the sardines.
- In a 2 qt. or approx. 8x8 baking dish, arrange potato slices in an even layer.
- Bake potatoes for 30-35 minutes until potatoes are tender and light golden.
- Remove potatoes from the oven and layer the sardines over the potatoes. Sprinkle cheese on top and return baking dish to oven.
- Bake again for about 5-10 minutes or until potatoes are crisp, sardines are warmed, and cheese is melted.
- Before serving, sprinkle chopped parsley on top. Serve with lemon wedges.
