Ingredients
- 1 can King Oscar Sardines in Extra Virgin Olive Oil with Lemon, reserve oil
- 1 cup jarred roasted bell peppers, drained and sliced
- 1/2 small red onion, sliced
- 1/2 cup canned chickpeas, drained
- 2 tbsp olive oil
- 4 slices toasted bread
- 1/4 cup hummus
- 1/4 cup fresh chopped herbs (basil, parsley, or dill)
- 1 tbsp lemon juice, or to taste
- Salt
- Black pepper
Creamy hummus and lemon sardines on toasted bread with roasted chickpeas, bell peppers, red onion, and fresh herbs for a bright, satisfying meal any time of the day.
Instructions
- Pre-heat oven to 450°F.
- Combine red onion and chickpeas in olive oil and spread over baking sheet pan.
- Roast onions and chickpeas for about 15 minutes or until crisp.
- To assemble: Spread hummus on toast and top with sardines.
- Add bell peppers, red onion, chickpeas, and fresh chopped herbs.
- Drizzle with lemon juice and reserved olive oil.
- Season with salt and pepper, to taste.
