Ingredients

For the Salad

  • 1 can King Oscar Sardines in Extra Virgin Olive Oil, oil reserved 
  • 4 cups chopped romaine lettuce
  • 1 small avocado
  • 1/4 cup crumbled feta cheese
  • 4 radishes, sliced
  • 1/2 cup chopped cucumber 
  • 2 boiled eggs
  • 1 cup cherry tomatoes, sliced in half
  • 1 tbsp chopped fresh dill, optional

For Dressing

  • Reserved oil from can King Oscar Sardines in Extra Virgin Olive Oil
  • 2 tsp fresh lemon juice
  • 1/2 tsp salt, or to taste
  • Black pepper, to taste

Crisp romaine piled with creamy avocado, feta, radishes, cucumber, boiled egg, and cherry tomatoes, all dressed with the sardines' own lemon olive oil. His Majesty approves.

Instructions

  1. Make the dressing: Put the reserved oil from the sardines can in a bowl. Add lemon juice, salt and black pepper. Whisk until combined. 
  2. On a plate add the chopped lettuce for the first base layer. 
  3. Layer the remaining ingredients over the lettuce: avocado, feta cheese, radishes, cucumber, eggs, and cherry tomatoes. 
  4. Top with fresh chopped dill. 
  5. Whisk the dressing one more time, then drizzle over the salad.
