Ingredients

  • 1 can King Oscar Sardines Mediterranean Style
  • 3-4 cups cherry tomatoes
  • 4 cloves, minced or thick sliced garlic 
  • 1/3 cup olive oil
  • 8 oz. block feta cheese
  • 1/2 tsp salt
  • Black pepper, to taste
  • 8 oz. pasta
  • 1/4 cup sliced olives 
  • 1/4 cup chopped parsley 
  • Red pepper flakes, optional 

A royal spin on the viral baked feta pasta. Cherry tomatoes and a block of feta roast until soft and jammy, then folded with pasta and Mediterranean-style sardines.

Instructions

  1. Preheat oven to 400°F.
  2. In a large baking dish, combine the cherry tomatoes, garlic, and olive oil. Toss to combine. 
  3. Nestle the block of feta in the middle of the tomatoes. Season everything with salt & pepper. 
  4. Bake at 400°F for about 30-35 minutes or until the tomatoes soften and split. 
  5. While the tomatoes and feta bake, cook the pasta to package instructions. Drain the pasta. 
  6. Smash the cooked cherry tomatoes and break up the feta cheese. 
  7. Stir in sardines, including the oil from the can then stir in the cooked pasta. 
  8. Gently stir everything until combined. Top with chopped parsley, sliced olives and red pepper flakes.
