Mediterranean Sardine Baked Feta Pasta

Ingredients
- 1 can King Oscar Sardines Mediterranean Style
- 3-4 cups cherry tomatoes
- 4 cloves, minced or thick sliced garlic
- 1/3 cup olive oil
- 8 oz. block feta cheese
- 1/2 tsp salt
- Black pepper, to taste
- 8 oz. pasta
- 1/4 cup sliced olives
- 1/4 cup chopped parsley
- Red pepper flakes, optional
A royal spin on the viral baked feta pasta. Cherry tomatoes and a block of feta roast until soft and jammy, then folded with pasta and Mediterranean-style sardines.
Instructions
- Preheat oven to 400°F.
- In a large baking dish, combine the cherry tomatoes, garlic, and olive oil. Toss to combine.
- Nestle the block of feta in the middle of the tomatoes. Season everything with salt & pepper.
- Bake at 400°F for about 30-35 minutes or until the tomatoes soften and split.
- While the tomatoes and feta bake, cook the pasta to package instructions. Drain the pasta.
- Smash the cooked cherry tomatoes and break up the feta cheese.
- Stir in sardines, including the oil from the can then stir in the cooked pasta.
- Gently stir everything until combined. Top with chopped parsley, sliced olives and red pepper flakes.
