Ingredients
- 2 cans King Oscar Yellowfin Tuna, oil reserved
- 1 cup cottage cheese, or to preferred creaminess
- 1 large stalk celery, diced
- 1/4 cup relish
- 1/4 cup chopped nuts
- 2 tsp mustard
- 2 tbsp minced onion
- 2 tbsp minced fresh dill
- 1 tsp fresh lemon juice
- Romaine hearts or endive leaves
- (Optional) 2 boiled eggs, quartered
- Salt, to taste
- Black pepper, to taste
Yellowfin tuna and cottage cheese tossed with celery, relish, chopped nuts, fresh dill, and mustard, spooned into crisp romaine or endive spears for a light, protein-packed bite.
Instructions
- In bowl combine the tuna, cottage cheese, celery, relish, chopped nuts, mustard, onion, dill, and lemon juice.
- Serve the tuna mixture on romaine or endive spears. For extra protein, serve with boiled eggs.
- For extra flavor, drizzle the reserved oil on top of eggs and tuna salad spears.
- Season with salt and pepper to taste.
