Ingredients

  • 2 cans King Oscar Yellowfin Tuna, oil reserved 
  • 1 cup cottage cheese, or to preferred creaminess 
  • 1 large stalk celery, diced 
  • 1/4 cup relish 
  • 1/4 cup chopped nuts 
  • 2 tsp mustard 
  • 2 tbsp minced onion 
  • 2 tbsp minced fresh dill 
  • 1 tsp fresh lemon juice 
  • Romaine hearts or endive leaves 
  • (Optional) 2 boiled eggs, quartered
  • Salt, to taste
  • Black pepper, to taste

Yellowfin tuna and cottage cheese tossed with celery, relish, chopped nuts, fresh dill, and mustard, spooned into crisp romaine or endive spears for a light, protein-packed bite.

Instructions

  1. In bowl combine the tuna, cottage cheese, celery, relish, chopped nuts, mustard, onion, dill, and lemon juice. 
  2. Serve the tuna mixture on romaine or endive spears. For extra protein, serve with boiled eggs. 
  3. For extra flavor, drizzle the reserved oil on top of eggs and tuna salad spears. 
  4. Season with salt and pepper to taste.
