Classic Egg and Anchovy Canapes

Ingredients
- 1 can King Oscar Anchovies in Olive Oil
- 4 slices toasted bread
- Butter, for topping toasted bread
- 4 lettuce leaves
- 2 hard-boiled eggs, sliced
- 1/2 cup pickled onions
- 2 tbsp chopped chives
- Black pepper, to taste
- Lemon wedges, for serving
Buttered toast layered with crisp lettuce, hard-boiled eggs, tangy pickled onions, and silky anchovies. Finished with cracked black pepper and fresh chives, these are a Norwegian party favorite, and easy to see why.
Instructions
- Butter each slice of toasted bread. Cut bread slices into serving sized pieces.
- Place a leaf of lettuce on each piece of buttered toast.
- Arrange egg slices and pickled onions on top.
- Top each piece with anchovy and black pepper to your liking.
- Garnish with chopped chives and serve with lemon wedges.
